We ship caviar and roe overnight with UPS to anywhere in the lower 48, carefully packed in insulated boxes with gel packs to keep it perfectly chilled. Orders placed by 12 PM EST Monday–Thursday go out the same day for next-day delivery (holidays and weekends excluded).

Storage

Roe lives its best life at 28–32°F. Keep it chilled until go time for maximum deliciousness.

Roe vs. Caviar: What's the Difference?

Short answer: Caviar is roe, but not all roe is caviar.

  • Roe

    Roe is the broad term for fish eggs. Salmon, trout, paddlefish, tobiko, you name the fish, those little pearls are roe.

  • Caviar

    Caviar is a specific type of salt-cured roe that comes from sturgeon. Think of it as the OG fish egg.

These days, you’ll see all kinds of salted fish roe labeled “caviar,”  but technically, sturgeon roe is the only real deal when it comes to traditional caviar.

So basically: Roe = fish eggs. Caviar = salt-cured roe from sturgeon.
